Travel Gourmande Fried Rice


A perfect Sunday brunch calls for a heartwarming comfort food that can be effortlessly enjoyed over family conversations, that is so easy to make without draining the budget.  Since I very rarely eat rice, I used to make this a lot after a party at home to recycle leftover rice, veggies or anything that I can add on.  One good bowl, add an egg on top et voila, it is already a complete meal.


Travel Gourmande Fried Rice
Serves 6

Ingredients:

Left over rice (3 1/2 cups of rice cooked in 3 1/2 cups of water in a rice cooker)
1 Big Carrot, minced and steamed
A handful of Baguio Beans or Fine Green Beans, chopped
1 Large Yellow Onion, chopped
6 cloves of garlic, minced
1 Spanish Chorizo, chopped into bite-size pieces
1 tbsp canola oil / olive oil
Kecap Manis
Oyster Sauce
Soy Sauce
Salt and freshly ground black pepper
6 Sunny side up eggs for topping

Optional:
Feel free to add any other leftover veggies and meat  e.g. broccoli, green peas, mushrooms, bacon etc.
If you want to lift the flavour for a spicy kick, chilli flakes is a great addition.

Cost:  Approximately Php 500  (USD $ 10)

Procedure:
1.  Heat the oil in a large wok over medium heat and sauté the onions and carrots  until they're soft for about 10 minutes.  Add the baguio beans and allow it to cook for about 2 minutes. Add the minced garlic. Once the garlic is slightly golden, mix the rice.  This will require lots of elbow grease so I prefer using a sturdy wooden laddle to stir the rice.

2.   I didn't measure the sauces.  I usually play with the amount I need on the spot to balance the taste. Add Kecap Manis, Oyster sauce and Soy Sauce generously while continuously stirring the rice until you don't see any white left and everything turns to a golden brown color.   The fried rice shouldn't be too wet nor should it be too dry.

3.  Fry the chorizo in a separate non stick pan over medium heat until they're cooked on both sides. 

4.  Once the fried rice is all blended, add freshly ground black pepper. Add the chorizo and its juices and stir.  You can add salt if needed, but I usually don't. The soy sauce already gives it the perfect amount of saltiness.

5. Optional:  Sprinkle chilli flakes and mix it. 

6.  Serve hot on a plate and top it with a sunny side up egg.

  2. I always hated rice too, until I became vegetarian ten years ago. Now I eat brown rice once a week stir/fried with onions, carrots, celery, broccoli, shrooms, zukkinni, whatever I find. I like to put some sunflower seeds in it too.
    When you have leftover rice you can also mix it with an egg or two and fry it as scrambled eggs instead of putting a fried egg on top. Or you can mix it with egg or two, add some spices and some sour cream and bake it.
