My Favorite Dinner
How's your Saturday going? If you were to post the typical dish you always eat for some reason and will never get tired of, what would it be?
Mine would be this:
Tomato Egg and Mortadella Salad with Vinaigrette
It's quite easy to do. It's a spin off of the avocado tomato and egg salad but I prefer this one more.
Ingredients:
2 medium sized tomatoes
1 large size hard boiled egg
4 slices of chicken and pistachio mortadella
Black Pepper
Vinaigrette: Red Wine Vinegar 2 1/2 Tablespoons
2 1/2 Tablespoons of Oil
How:
Cut tomatoes into small cubes. Do the same with the hard boiled egg. Cut the chicken pistachion mortadella into small squares. Add a dash of black pepper. Add red wine vinegar and oil. Mix together and serve.
It is healthy especially for those in the veggie + protein days of Dukan diet. Quick to prepare and you have a tasty dinner. I always have it and I don't mind repeating it most days.
